Champagne Brut Mill\u00e9sime 2015<\/strong><\/h2>\n\n\n\n

The Year 2015 started quite promising with a dry Spring, which continued to be sunny from early summer until the grape harvest. Picking started on September 4th. A very sunny vintage.<\/p>\n\n\n\n

This Brut is a blend of 50% Pinot Noir and 50% Chardonnay<\/strong>, vinified and aged in oak barrels.  No malolactic fermentation.  Made exclusively with estate-grown grapes<\/strong> from 2015 harvest.  Dosage 2g\/l.<\/p>\n\n\n\n

Very fine and persistent bubbles with a delicate yet pure light golden colour in the glass.  The nose is elegant with complex aromas of peaches, pears, grapefruits, citrus and a present minerality.  On the palate, a fine complexity with well-balanced hints of citrus fruits and toasted notes.  The palate shares the same tastes, with a very long finish.  This champagne needs to be opened at least 10 minutes before serving.<\/p>\n\n\n\n

Food Pairing:<\/strong> Ideal for an aperitif with oysters or Foie-gras.  In 5 years time, it will be ready to accompany main dishes like scallops or roasted chicken in cream sauce and mushrooms.<\/p>\n\n\n\n

Champagne Tendresse Blanc de Blancs 2012
100% Chardonnay<\/strong><\/h2>\n\n\n\n

The year 2012 began with a complicated spring with a lot of rain and a late flowering around the end of June. Fortunately the season ended with a beautiful, and rather sunny summer which allowed normal grape ripening with a harvest date around September 14.<\/em><\/p>\n\n\n\n

Made exclusively from\u00a0100% Chardonnay estate grown grapes<\/strong> that were harvested in 2012. \u00a0Chardonnay was vinified and matured in oak barrels. \u00a0Partial Malolactic fermentation.\u00a0<\/p>\n\n\n\n

Brut Nature z\u00e9ro dosage <\/strong>was not intentional for this mill\u00e9sime, but it was mother\u2019s nature choice. Disgorged in July 15th<\/sup>.  This is made only from Tete de Cuv\u00e9e juice \u2013 usually the purest and most fine, austere \u2013 in order to keep a precise level of acidity, which takes a bit more time to open up.  <\/p>\n\n\n\n

The nose is full of tart lemon curd, quince, citrus and granny smith apples, which all follow on the palate.  In the mouth, the Champagne delicately blooms with rich volume.  Then, like a jet speeding out of a puffy summer cloud, this searing stream of acidity comes through the mid pallet. Yeasty notes of choux pastry or Sourdough starter are accented by delicate tannins, with a saline, slight oxidative note and a crisp finish. <\/p>\n\n\n\n

Food Pairing:<\/strong> To be enjoyed from the aperitif to the meal starting with appetisers based on fish, oysters, fresh scallops or white meat.<\/p>\n<\/div><\/div>\n\n\n\n

Champagne Brut – Mill\u00e9sime 2014<\/strong><\/h2>\n\n\n\n

Vintage 2014 had excellent ripening conditions, grapes harvested at 11% naturally, on this vintage 50% of the malolactic was done.<\/em><\/p>\n\n\n\n

This Brut is a blend of 50% Pinot Noir and 50% Chardonnay<\/strong>, vinified and aged in oak barrels.  Partial malolactic fermentation.  Made exclusively with estate-grown grapes<\/strong><\/p>\n\n\n\n

Nose very slightly brioche at the opening, extremely fine bubbles.
Very pure wine with floral notes (white flowers and Bay Leaf \/ laurel). Fruit and citrus fruit notes develop on the nose and then on the palate when aerated. Long and saline mouth.<\/p>\n\n\n\n

Food Pairing:<\/strong> This Champagne screams OYSTERS!  Or for more indulgence, Foie Gras cooked very simply, in the terrine, a bit of salt and pepper, no other condiments, for 45 minutes in the oven (no alcohol in the foie). <\/p>\n<\/div><\/div>\n\n\n\n

Champagne Ros\u00e9 L’Impertinente 2012

Made from 100% Estate grown Pinot Noir<\/strong>.  Ros\u00e9 saign\u00e9e from a 3-day maceration. Ros\u00e9 Champagnes are aged at least 5 years in bottle.  Malolactic Fermentation is never done for the ros\u00e9 Champagne, which needs to keep the acidity as an insurance plan to help the Champagnes age gracefully in the bottle.  <\/p>\n\n\n\n

The AOC dictates that one producer cannot have the entire production vintage dated. Therefore, Delphine’s ros\u00e9 Champagne does not have the vintage written on the front label, but rather the date of harvest is written discretely on the back label of the bottle, which is allowed.<\/p>\n\n\n\n

Tasting Note:<\/strong> Vibrant Strawberry pink colour in the glass with a rich, round mousse.  Very precise Pinot notes with plum, cherries and spices. Very fine bubbles, fresh and delicate palate.<\/p>\n<\/div><\/div>\n\n\n\n

The range “Legend”<\/strong> is becoming more and more famous<\/strong> and is beginning to make an impression with Champagne connoisseurs thanks to its originality<\/strong> and its rarity<\/strong>.  A lot of wine-lovers are seduced by this inexhaustible source of delights<\/strong>…<\/p>\n\n\n\n

A selection of delicious vintages from 1995 to 2005<\/strong> is available in two different cuv\u00e9es<\/strong>;

A Cuv\u00e9e Brut blend<\/strong> of Pinot Noir and Chardonnay and a Blanc de Blancs<\/strong> (bottles and magnums).

Here we focus on two special vintages very dear to Champagne Louise Brison: L\u00e9gende Mill\u00e9sime Brut 2004 and L\u00e9gende Mill\u00e9sime Brut 2000.<\/p>\n\n\n\n

To celebrate the end of this crazy year 2020 – we focus on Mill\u00e9sime 2000 \u2013 a very high quality vintage.  In comparison of the year 2000 vs 2020 \u2013 it is an expression of lifetimes apart, not due to the wine style changing dramatically, but rather the Global Warming changing the vineyards.  To think of reaching the level of present-day ripeness in the 2000\u2019s, with exception for 2003, there is no way this could have been imagined.  In the past, such as vintages from the 2000’s, the wines had this natural acidity, which will continue to be a big concern for Champagne producers in the future.<\/p>\n<\/div><\/div>\n\n\n\n
