Cette semaine, nous allons rendre visite au domaine Selvapiana en Toscane, sur l’Aire d’appellation Rufina, la plus ancienne, la plus en altitude \u00e9galement des appellations en Chianti.<\/p>\n

\"\"<\/a><\/p>\n

La Fattoria Selvapiana est situ\u00e9e \u00e0 Pontasieve, dans la vall\u00e9e de la Sieve, vall\u00e9e centrale de l’Appellation RUFINA, connue pour sa fra\u00eecheur.\u00a0Depuis la fin des ann\u00e9es 1957, Francesco Giuntini a particip\u00e9 \u00e0 restaurer avec intelligence et \u00e9nergie le prestige du Chianti RUFINA et \u00e0 construire une r\u00e9putation de qualit\u00e9 pour Selvapiana. Aujourd’hui, ses enfants adoptifs Federico et Silvia Massetti Giuntini suivent tous les deux cette mission. Le Sangiovese y est le c\u00e9page roi, c\u00e9page typique de la r\u00e9gion, majoritairement plant\u00e9.<\/p>\n

Le domaine, situ\u00e9 \u00e0 240 m\u00e8tres d’altitude, s’\u00e9tend sur 58 ha de vignoble dont une large partie situ\u00e9 autour du domaine, Les parcelles Selvapiana, Pontasieve, Cerbognole permettront de produire le Chianti Rufina vedemmia avec 95% de Sangiovese.<\/p>\n

Tout le domaine (vigne et olive) est en culture biologique depuis des ann\u00e9es, les sols sont enherb\u00e9s parfois travaill\u00e9s, les d\u00e9cisions sont prises en fonction des besoins du sol. En ce moment, le travail d’effeuillage est un des plus important, enti\u00e8rement manuel, il permet au Sangiovese une meilleure maturit\u00e9.<\/p>\n

Le cru Bucerchiale, b\u00e9n\u00e9ficiant de la meilleure exposition Sud Sud-Ouest et plant\u00e9 uniquement avec des s\u00e9lections massales de Sangiovese, donnera un vin du m\u00eame nom. Le sol, \u00e0 dominante argilo-calcaire y est schisteux.<\/p>\n

\"\"<\/a>Les vignes situ\u00e9es sur l’appellation Pomino sont situ\u00e9es beaucoup plus en altitude (jusqu’\u00e0 550 m\u00e8tres). Deux propri\u00e9taires ont des vignes sur cette appellation tr\u00e8s ancienne qui autorise la plantation de Merlot et Cabernet Sauvignon : la famille Frescobaldi et Villa Petrognano g\u00e9r\u00e9e par Selvapiana. \u00a0Le paysage y est compl\u00e8tement diff\u00e9rent, tr\u00e8s collineux (contre fort des Apennins), le climat encore plus frais et la vigne est vendang\u00e9e plus tard.<\/p>\n

Selvapiana c’est \u00e9galement un grand nom parmi les huiles d’olive, 40 hectares d’oliveraie de vari\u00e9t\u00e9 Frantoio compl\u00e8tent le domaine. Des oliviers tr\u00e8s anciens, souvent centenaires, donnent une huile tr\u00e8s verte, parfum\u00e9e d’ar\u00f4mes de tomate verte, d’artichaut, tr\u00e8s \u00e9pic\u00e9e … d\u00e9licieuse.<\/p>\n
