It&#8217;s his happy place.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/mcusercontent.com\/8cc45cf08bf7beaf6f607b870\/images\/afd47625-6b92-4de4-9179-b940ff5cdf62.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>Making wine in the Ard\u00e8che is paradise for him, especially when the winters are snowy like this year.<\/p>\n\n\n\n<p>As a former ski instructor, he can reconnect with his second passion: skiing, or sliding on snow in general.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/mcusercontent.com\/8cc45cf08bf7beaf6f607b870\/images\/e9d18235-c49e-4864-acfc-2d33e5042944.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>For this end of the year, the recipe he shares is the recipe for a whole day, as follows:<\/p>\n\n\n\n<p>1) You have to leave early with your skis, your sled, your kayak or your sled and your dogs (and a picnic).<br>2) Climb on the snowy summits.<br>3) Have fun all day long, get &#8220;airy&#8221; = get drunk on fresh air.<br>4) And in the evening, go home and prepare THE family dish that is easy to share if there are several of you: the Tartiflette! It is impossible to be disappointed.  As a father of 5 children, he knows how to make them all very happy!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/mcusercontent.com\/8cc45cf08bf7beaf6f607b870\/images\/e5d34a0f-4392-4057-a9d0-24fb19d97367.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<p>TaaaDaaa &#8211; Fran\u00e7ois recommends a bottle of Saint Joseph red wine.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"text-decoration: underline;\">Ingredients<\/span><\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>4-5 kg of potatoes &#8211; peeled<\/li><li>Two white onions &#8211; peeled and diced<\/li><li>60 grams of butter<\/li><li>Bacon or lardons &#8211; 250-300 grams<\/li><li>Clove of Garlic<\/li><li>250ml cup white wine<\/li><li>250ml cup cream<\/li><li>Reblochon cheese &#8211; sliced in half with two crusts<\/li><li>Salt and pepper to season<\/li><li>Fresh parsley as a garnish<\/li><\/ul>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/mcusercontent.com\/8cc45cf08bf7beaf6f607b870\/images\/49dc9bb9-6824-4502-907f-92719d227e4f.jpg\" alt=\"\"\/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><span style=\"text-decoration: underline;\">Cooking Instructions<\/span><\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Boil the potatoes in water for 20 minutes, then slice them into medallions, about 0.5 cm thick.<\/li><li>Dice the onions and fry them in a little butter.<\/li><li>Add the smoked bacon (or lardons) and let them also fry over a fairly low heat (about 10 minutes), stirring regularly.<\/li><li>Prepare a baking dish (Fran\u00e7ois uses a round terracotta dish 40 cm in diameter, 10 cm high). Rub the bottom of the dish generously with a clove of garlic.<\/li><li>Arrange the dish in three layers: cover the bottom of the dish with half of the potatoes, then add the onion and bacon mixture, and finally add the rest of the potatoes on top.<\/li><li>Pour over the white wine and the whipping cream. Season with pepper (copiously) and salt (lightly).<\/li><li>Preheat the oven to 190\u00b0C (thermostat 6-7).<\/li><li>Take out the reblochons cheese wheels, cut them in half (in the thickness) and place them (crust side up) on top of the potatoes.<\/li><li>Put the dish in the oven at 180\u00b0C for about 20 minutes (I put the oven on &#8220;rotating heat&#8221; + grill).<\/li><li>Just before serving (in the baking dish), sprinkle with a little chopped parsley.<br>This unique dish can be eaten (that&#8217;s the right word!) accompanied by the either the wine used for the recipe, or paired with a Saint Joseph from <a href=\"https:\/\/genuinewines.com\/en\/domaines\/francois-tissot-ardeche\/\">Les 7 Pierres<\/a>!<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Tartiflette!
